Radish Paratha(Mooli/Mullangi)

Radish paratha(No onion/No garlic)

This recipe comes in handy for quick lunch fixes or even for a healthy breakfast  schedule.
The flavour of ajwain makes it absolutely delightful.
Also jaggery is added so that the radish smell doesnt overrrule.

What you need:(mentioned in the order to saute)

Oil or desi ghee
Mustard seeds
Omam
Radish shredded 1cup(squeeze the water from it)
Turmeric powder
Red chilli powder
Dhaniya powder
Jeera powder
Salt to taste
Green chillies
Jaggery little
Corn flour.
Water to drizzle and cook.

For the parathas.
salt
oil or ghee to taste
whole wheat flour
water

Start Cooking..Here you go !

Step 1: For the parathas, using the ingredients prepare paratha dough and keep aside.

Make sure:
  • Let it rest for atleast 1 hr.
  • The more you rest it ,more softer the parathas are


Step 2: For the filling, in the order mentioned saute the essentials and once the radish is semi cooked,add the corn flour and a tsp of water and let it cook for 5 mins.Let the water get dried up fully and the mixture is in dry subzi form.

Make sure:

  • Make sure to squeeze the water content from radish and use it accordingly.Use the water to make rasam/soups/sambar as you prefer.
  • Need not overcook the radish  else the crunchiness will not be maintained in the recipe.
  • Make sure no too much moisture is there in the filling else you cannot properly roll.
  • You can add in more spices if you do not like the raw smell of baby corn,
  • If you are making it for kids,reduce the spiciness and alter the filling accordingly.You know better :)


Step 3: Now take a scoop of filling and stuff the paratha and roll them.

Step 4: Serve hot with raita or tomato sauce.

Enjoy the delicious and healthy radish parathas.
