Quick Macaroni Pasta Veggie Delight

This pasta is easy and healthy savoured with veggies of your choice.
I have used cabbage,beans and panner in this recipe.

Ingredients:

  • Mac pasta boiled as per instructions.
  • Cabbage finely shredded
  • Beans finely chopped
  • Panner cut in cubes
  • Garlic 1 pod
  • Onions
  • Oregano
  • White pepper to taste
  • Salt
  • Pasta sauce to taste.(available readily in market)
  • Milk few drops
  • Cheese shredded.


Method:

1.Boil the macaroni pasta as per instructions.Cool it and keep aside.
2.Chop the veggies.
3.In oil.fry onions and garlic followed by all veggies.
4.In high flame stir them for few minutes till they are tender.
Note:If for smaller kids,add some water and boil till veggies are boiled and water is drained.
5. Add salt, pepper,oregano.
6.Add little of pasta sauce and give a mix.
7.Finally add milk and let the flavours spread for few mins.
8.Top it off with cheese and savour the flavours :)

Delicious Yummy Mac Pasta is ready.

Baked Bread Cheese rolls

The name may sound complex.But if you have left over bread and wanna make a quick snack using baking options try this out.
Easy to prepare with simple ingredients.Kids can be imvolved to make this delicious snack.

Ingredients.
Bread , soaked in water and crumbled after squeezing water.
Salt
Tomato ketchup
Corn flour to bind
Red chilli flakes
Oregano little
Mozarella cheese shredded or normal amul cheese cubes shredded.

Don't worry you can also use cheese slices cut finely and add.

Lets go to prepare.

Crumble bread crumbs and mix up all the ingredients
Make a stiff dough kind of textured mix.
Now shape in form of rolls or cyinders or sqaure or circle what not !!

Preheat oven to 200C for 10 mins.
Bake  these rolls for about 25 to 30 mins at 180 degree C until the outer crust gets nice brown colour.

Crispy on the outside ,Cheesy on the inside.
Baked bread rolls are ready to hit your palate !



Red Poha Cutlet(No bread/No potato)

This quick snack can be done in a jiffy and my little one gobbled it and asked for more.
Poha in any form is so good for health and i decided it to use it as a substitute for potato or bread in making cutlet.
Dont worry if you do not have bread crumbs or potato to make cutlets.This recipe will change your idea forever.Just mix up the ingredients and shallow/deep fry them in batches.Sounds simple right ! :)

Pohas texture can be substituted for potatoes in cutlet and is a healthy option for elders as well.



What you need:(mentioned in the order to saute)
Red poha soaked in warm water for 10 mins
Onions
Peanuts crushed
Cashews crushed or any nuts you prefer
Salt
Red Chilli powder
Turmeric powder
Coriander powder
Amchur powder
Garam masala pinch
Coriander leaves
Oats slightly crushed
Little corn flour and water to bind.


Start Cooking..Here you go !

Step 1: Mix all the ingredients after squeezing water from poha and mash it well preferably with hand.Mix it up well.

Step 2: Adjust salt and deep or shallow fry them in the shape desired for cutlets

Hot crunchy Poha cutlet is ready ! Kids would definitely love it.


Panner Aloo Paratha(Kids special)

Panner Paratha is a healthy and nutritive dish for kids.

What you need:(mentioned in the order to saute)

Oil or desi ghee
Mustard seeds
Omam
Panner shredded 1cup
Potato boiled and mashed
Turmeric powder
Red chilli powder
Dhaniya powder
Garam masala a pinch
Salt to taste
Corn flour.
Water to drizzle and cook.

For the parathas.
salt
oil or ghee to taste
whole wheat flour
water

Start Cooking..Here you go !

Step 1: For the parathas, using the ingredients prepare paratha dough and keep aside.

Make sure:
  • Let it rest for atleast 1 hr.
  • The more you rest it ,more softer the parathas are


Step 2: For the filling, in the order mentioned saute the essentials add the corn flour and a tsp of water and let it cook for 5 mins.Let the water get dried up fully and the mixture is in dry subzi form.

Make sure:

  • Make sure no too much moisture is there in the filling else you cannot properly roll.
  • You can add in more spices if you do not like the raw smell of baby corn,
  • If you are making it for kids,reduce the spiciness and alter the filling accordingly.You know better :)


Step 3: Now take a scoop of filling and stuff the paratha and roll them.

Step 4: Serve hot with raita or tomato sauce.

Enjoy the delicious and healthy panner parathas.


Radish Paratha(Mooli/Mullangi)

Radish paratha(No onion/No garlic)

This recipe comes in handy for quick lunch fixes or even for a healthy breakfast  schedule.
The flavour of ajwain makes it absolutely delightful.
Also jaggery is added so that the radish smell doesnt overrrule.

Mixed Veg Dhania Gravy(No coconut version)

Looking for an easy peasy side dish for roti/chapathis during busy weekday evenings?

Presenting a quick veg gravy in pressure cook method.If you have your veggies already diced and stored,just grind few ingredients,saute veggies n pressure cook for 2-3 whistles.You are all set then :)

To Grind:

1.Coriander big bunch
2.Jeera
3.Green chillies
4.khus khus
5.Ginger
6.Garlic
7.Roasted gram

To Saute:
Onions
Tomatoes
Mixed veggies
Bay leaf,cinnamon,clove
Turmeric powder
Red chilli powder
Garam masala to taste

Preparation:
1.keep veggies ready
2.Finish the grinding part
3.in a pressure cooker,heat oil add the masala spices followed by onions,tomatoes,veggies and the green paste.
4.Add spice powders
5.Check salt ,add water
6.Pressure cook for 3 whistles.
7.Once opened just boil gravy for 5 mins with a pinch of jaggery.
8.Top it with few drops of lemon juice.

Enjoy healthy no cocovegetable gravy with hot hot
rotis.

Black Chana Biriyani


This recipe comes handy for busy mornings.
Just soak the chana overnight.Chop the essentials,saute and devour the yummy recipe.
Before mixing with rice,this can be made in a gravy avatar and relished with rotis/naan/dosa.


Ingredients List


Black Chana
Onions
Tomatoes
Ginger
Green chillies.
Pepper powder
Turmeric powder
Chole masala
Coriander
Dry masala spices
Rice
Salt
Water

Method:

Step 1: In a kadai,fry the dry masala spices(cinnamon,cloves,caradamom,kalpasi) and onions in butter or oil
Step 2: Add ginger and green chilly pieces.
Step 3:Add finely cut tomatoes.Let it cook for 5 mins
Step 4: Now add in the spice powders and cook when the base gravy should be in semi gravy form.
Step 5: Add black chana and check for salt.Add little water so that the gravy taste is absorbed in chana.

Step 6 : Garnish with coriander leaves  and when the gravy reaches sabzi consistency,mix in the needed rice and give a quick stir

Step 7: Pour warm ghee and relish !

Kabuli Chana Pulao


This is a quick and easy recipe.Requires grinding simple ingredients.Then saute n relish :)

Ingredients:
  • Chana soaked overnight and boiled
  • Onions finely cut
  • Coriander
  • Ginger minced
  • Garlic minced
  • Green chillies finely chopped
  • Tomatoes finely chopped
  • Red chilli powder
  • Amchur powder
  • Turmeric powder
  • Garam masala.
  • Water
  • Salt to taste
  • Basmathi Rice boiled

Preparation

Step 1: Grind onions,tomatoes,coriander,ginger,garlic and green chillies.
Step 2: In a kadai,fry the above paste in butter or oil.
Step 3: Let it cook and add in the spice powders.
Step 4:Add the kabuli chana with water and check for salt.
Step 5:Let the gravy simmer for 10 mins,
Step 6: Once the mositure is absobed,mix in basmati cooked rice.
Step 7:Relish with ghee topped up :)

Baby Corn N Capsicum Paratha recipe

Baby corn subzi was a regular at my place and once sparked with an idea why not make stuffed parathas with baby corn.My 3 year kiddo loves it without knowing the secret healthy ingredient inside.The capsicum flavor enhances the taste of the stuffing.Chatpata at the same time healthy.Serve it hot as rolls with tomato ketchup for little ones  or along with cucumber raita /mango pickle/any semi gravy for elders.

Know Baby Corn Better


What you need:(mentioned in the order to saute)

Oil or desi ghee
Jeera 1 tsp
green chillies finely chopped
garlic few pieces finely chopped
onions very finely chopped
Capsicum finely chopped
baby corn pieces finely shredded
red chilli powder to taste
dhaniya powder to taste
turmeric powder to taste
salt
garam masala to taste
coriander finely chopped
tomato ketchup 1 tsp
corn flour
Jaggery if needed a pinch
water little

For the parathas.
salt
oil or ghee to taste
whole wheat flour
water
