Baby Corn N Capsicum Paratha recipe

Baby corn subzi was a regular at my place and once sparked with an idea why not make stuffed parathas with baby corn.My 3 year kiddo loves it without knowing the secret healthy ingredient inside.The capsicum flavor enhances the taste of the stuffing.Chatpata at the same time healthy.Serve it hot as rolls with tomato ketchup for little ones  or along with cucumber raita /mango pickle/any semi gravy for elders.

Know Baby Corn Better


What you need:(mentioned in the order to saute)

Oil or desi ghee
Jeera 1 tsp
green chillies finely chopped
garlic few pieces finely chopped
onions very finely chopped
Capsicum finely chopped
baby corn pieces finely shredded
red chilli powder to taste
dhaniya powder to taste
turmeric powder to taste
salt
garam masala to taste
coriander finely chopped
tomato ketchup 1 tsp
corn flour
Jaggery if needed a pinch
water little

For the parathas.
salt
oil or ghee to taste
whole wheat flour
water

Start Cooking..Here you go !



Step 1: For the parathas, using the ingredients prepare paratha dough and keep aside.

Make sure:
  • Let it rest for atleast 1 hr.
  • The more you rest it ,more softer the parathas are


Step 2: For the filling, in the order mentioned saute the essentials and once the baby corn is semi cooked,add the corn flour and a tsp of water and let it cook for 5 mins.Let the water get dried up fully and the mixture is in dry subzi form.

Make sure:
  • Need not overcook the baby corn else the crunchiness will not be maintained in the recipe.
  • Make sure no too much moisture is there in the filling else you cannot properly roll.
  • You can add in more spices if you do not like the raw smell of baby corn,
  • Ketchup makes the dish slightly sweet and tangy.With green chillies the combination is awesome.
  • If you are making it for kids,reduce the spiciness and alter the filling accordingly.You know better :)


Step 3: Now take a scoop of filling and stuff the paratha and roll them.

Step 4: Serve hot with raita or tomato sauce.
